If you’ve been looking for a decadent, but easy one pot meal, you have to try my creamy vegetable orzo! This recipe is packed with tons of vegetables like zucchini, mushrooms, spinach and broccoli and cooking the orzo with milk and broth in one pot gets you the most melt in your mouth texture !!
Not only is it a meal the whole family will love… it’s a great way to sneak in all those veggies – even for the kids !
In a large pot heat 1 tbsp of butter and 1 tbsp of oil over medium heat.
Add the mushrooms and zucchini with a small pinch of salt and saute for 3-4 minutes until they are just fork tender, then use a spatula to remove them from the pot and set aside, reducing the heat slightly if necessary.
Add the remaining tbsp of butter, swirling it around to pick up any browned bits.
Add the orzo, garlic and stir for about a minute then add the tomato paste and cook for an additional 2 minutes.
Then add the broth, broccoli, milk,salt, turmeric, garam masala. Bring this to a boil then reduce heat to low, place a lid on the pot and cook for 8 minutes.
Stir in between to make sure the orzo isnt sticking to the bottom of the pot. Once the orzo is cooked, add in the spinach, zucchini and mushrooms and serve hot ! you can top it off with a squeeze of lemon or sprinkle of chili flakes and some fresh grated pecorino Romano if you choose :)
