For a SUPER easy, 10-ish minute lunch recipe, make my incredible Curried Chickpea Salad! It’s perfect served on toast, with crackers, or in a salad with loads of greens!
For 8 years, I worked at my parents’ deli where I made my share of hoagies and grinders, but it’s also where I also discovered my love for deli salads! This Indian-inspired Curried Chickpea Salad, with Indian flavors like curry powder, garam masala, turmeric, cilantro and green chilis, is an upgraded, vegetarian version of my popular Curried Egg Salad Sandwiches! If you replace the mayo with greek yogurt or eggless mayonnaise like this one- it is pure vegetarian!
Similar to many Mediterranean recipes with hummus, this no-cook, vegetarian meal is simple, healthy, and so easy to make – it’s perfect for your meal prep menu or for a quick lunch on crazy days!
You can watch me make it here. Hope you enjoy and don’t forget to tag me on @thechutneylife when you make it! Happy Eating!

Few Important Tips & Recipe Variations
- Replace the traditional mayo with an egg-free version like this eggless Hellmans Mayo for a tasty vegan recipe!
- Try variations and add more protein by swapping all or half of the mayo with Greek Yogurt.
- Don’t be tempted to mash the chickpeas into a paste – texture is a good thing here!
- This will last unto 5 days in the refrigerator as long as it’s in an airtight container like my favorite Rubbermaid Brilliance Glass Containers
- You can make these less spicy but using less Thai green chili or swapping it for a jalapeño pepper with the seeds removed.
- You can have fun by swapping the cilantro for herbs like tarragon, parsley and dill!
