I’ve been working on this Instant Pot Mexican Rice recipe for so long and am super excited to finally share it with you ! It’s simple, incredibly flavorful and because it gets made in the IP it doesn’t require a ton of supervision. I wanted to keep it minimal in ingredients as well because most likely you will serve this as a side and let’s be honest- Mexican inspired cuisine requires a LOT of chopping- so I like to keep things simple when possible.
This recipe would be great to serve as a side to any of my Mexican Inspired dishes like the Poblano Enchiladas, Tandoori Quesadillas or my Taco Pizza!! You can also easily omit the beans or swap them out with black beans if you wish!

This seems like such an easy recipe! I look forward to trying it. Just one question, in the directions you mentioned adding broth but didn’t see it in the ingredients. Could you please clarify? Do I just need to add the water or also veg broth? Thank you.
