Hello you wonderful people! I’ve been a little M.I.A but I am back with a recipe that you guys are going to love! I’m not really all that into fruits but if you chop it up, throw it on some bread thats been smeared with a dollop of ricotta? Well, then of course, I am a fan of fruit. 🙂
I initially set out to do a strawberry bruschetta but when I walked past these nectarines at the supermarket, the aroma was so strong I felt like I could taste them! I decided to do a quick little switcharoo and I am SO glad I did.
My local market sells the best cheeses (I’m a lucky gal) so I was able to score some delicious jersey made ricotta! Many grocery stores now make their own ricotta (saw some at Shop Rite if any of you have one near you!) so just ask if you don’t see it near the cheeses.
These would be great served for a brunch, a quick afternoon snack or even as an appetizer. An outdoor soiree would be especially perfect for these!
Want to get fancy? Try grilling the nectarines first to add some great color and a touch of smokey flavor. You could also use a truffle honey or a lavender honey to add a little something more fun 🙂

Nectarine Bruschetta with Basil Ricotta & Honey

Ingredients
3 Nectarines, peeled and diced small
1/2 cup pomegranate arils
1 teaspoon rice wine vinegar
1 tbsp honey
1 1/2 teaspoon chopped mint
1 cup ricotta
2 tablespoons finely chopped basil
2 tbsp apricot jam mixed with 2 tbsp water (heated in microwave for 30 seconds and then brought to room temp..)
sliced baguette bread
salt
Instructions
- In a large bowl, combine the nectarines, pomegranate arils, rice wine vinegar, honey, mint, pinch of salt and set aside.
- In a separate bowl mix together the ricotta, basil, apricot jam.
- Assemble by spread a generous smear of ricotta on the bread, top with nectarine and pomegranate mixture and drizzle with honey all over.
