Back to school routines can be stressful for the entire family. With new schedules, busy day to day tasks and overall just ramping back up after summer can be so hard. I love to simplify this transition period by relying on meals that don’t require too much effort! So today I’m sharing my recipes for Taco Night! I make my filling with Simply Nature Organic Black Beans from ALDI and they are so so delicious! I also pick up fresh produce from my local ALDI to whip up a delicious Pico De Gallo and quick Guacamole. This dinner is always a hit and it’s just packed with so much flavor! It’s great for families and if you’ve got meat lovers in the family, I love using ALDI Kirkwood Breaded Chicken Filets (pop them in the air fryer for 10 mins) and chop them up for a delicious taco filling!

Depending on your location, ALDI also has the option of grocery delivery or pick up and this past year that has been such a HUGE help for my family. I simply hop on their website, place my order and have my groceries in no time- highly recommend for those with little time on their hands!

 

 

Black Bean Tacos

Prep Time: 20 Minutes

Cook Time: 20 Minutes

Serving Size: Serves 2-3

Black Bean Taco Filling:

2 tsp Simply Nature 100% Avocado Oil

1 Jalapeno Diced

1 tsp cumin seeds (or cumin powder)

¼ cup diced onions

1 can Simply Nature Organic Black Beans

2 tsp Casa Mamita Taco Seasoning Mix

2 tbsp Casa Mamita Salsa

2 cloves garlic, grated

Salt to taste

Taco Shells

Guacamole:

Combine all the ingredients and use a form to mash together:

1 Avocado, pitted and diced

¼ cup chopped cilantro

¼ cup chopped tomato

¼ cup diced onion

1 jalapeno diced

¼ tsp cumin powder

Juice of lime or to taste

¼ tsp garlic grated

Salt to taste

 

Pico De Gallo:

Mix all ingredients together:

1 cup diced tomato

¼ cup diced onion

¼ cup chopped cilantro

1 clove garlic minced

1 lime, juiced

Salt and pepper to taste

Taco Toppings: Shredded Cheese, Sour Cream, Scallions, Sliced Jalapenos

Directions:

  1. Heat oil over medium high heat and add the cumin seeds and jalapenos. After a few seconds add the diced onions and sauté until onions are translucent.
  2. Add the drained and rinsed beans, taco seasoning, garlic, and sauté until garlic is fragrant. Next add the salsa and stir to combine. Cook on low heat for about 10 minutes. Remove from heat.
  3. Assemble tacos or layout for a DIY platter!
