Summer pretty much screams MOJITO. They  are light, refreshing and almost anyone will say yes to an ice cold glass of these Pomegranate Ginger Mojitos! This recipe makes a pretty large amount but that’s because I  absolutely despise making one drink at a time- I’m ALL about pitcher drinks and in the coming weeks I’ll be sharing some big batch cocktails and cocktails that make life (and cleaning up) so much easier.

What’s in a Mojito?

Generally a mojito consists of light rum + mint+ lime +club soda + simple syrup (an authentic version would use sugar cane for sweetener. You can add juices like mango, guava, pineapple and like I’ve done today, Pomegranate!

How to Serve a Mojito:

The way I’ve shared this recipe, you just have to make one big patch and can store it in a large pitcher or decanter. When you’re ready to enjoy the cocktail or serve it, just fill up a glass of ice pour the Pomegranate Rum mixture until the glass is 3/4 of the way full and top the remaining 1/4 with club soda. Give it a quick stir, garnish with a few fresh mint springs and slice of lime and enjoy!

Pomegranate Ginger Mojito

Ingredients

4 cups Pomegranate juice, chilled

1.5 cups Light Rum (I  like Cruzan Rum)

1/4 cup lime juice, freshly squeezed (about 3 limes)

1 cup mint leaves, divided

sliced limes for garnish

Ginger Mint Simple Syrup:

1 cup water

3/4 cup sugar

1 large (about 4-5 inch)  knob of ginger, washed and cut into thin slices

3/4 cup tightly packed mint leaves

Instructions

Make the Ginger Mint Simple Syrup:

  1. Place the water, sugar, and ginger  in a pot on high heat. Stir so the sugar dissolves and bring to a boil. Let this mixture boil gently for a few minutes and then turn the heat to low, cover the put and let it simmer for about 5-7 minutes.
  2. Take the lid off the put, turn the stove off, throw in 3/4 cup of mint leaves, stir well  and let this mixture sit until it is completely cooled.
  3. Once the mixture is cooled, strain it so the mint and ginger is discarded and you only have syrup left. 

Making a Batch of Pomegranate Ginger Mojitos:

In a large pitcher or drink dispenser, combine the Pomegranate juice, rum, lime juice, ginger mint simple syrup, 1/2 cup mint leaves,  and mix well. You can let this entire mixture chill in the refrigerator for a few hours or even over night.

How to Serve:

Fill each glass  full of ice, pour in the pomegranate rum mixture upto 3/4 of the way, and fill the remaining 1/4 of the cup with club soda, top with fresh mint leaves and give it a gentle stir. Top with a lime slice/wedge and serve with a straw!
