You guys, today I’m sharing what I like to call a “showstopper salad”! This Thai Mango Crunch Salad with Spicy Peanut Dressing is incredibly flavorful (think sweet and spicy), and it is also so BEAUTIFUL to look at. It’s got great crunch from red peppers, wonton strips, and cabbage but is completely balanced by soft and juicy mangos that really brighten up the entire dish. I love finding creative ways to enjoy mangos, and they are a wonderful addition to a salad!
If you’re trying to get more vitamin C in your diet, look beyond just the citrus fruits. Did you know that mangos are an excellent source of vitamin C, and a 3⁄4 cup serving packs in half of the daily value recommended for the day? It’s true!
To save time, you can make the spicy peanut dressing in advance and use pre-cut kale/cabbage mixes. I love serving this salad the way it is pictured so everyone can create their own little meal the way they like! It works great for lunch, dinner, and if you want to make it heartier, you can add chicken, lentils, or tofu! Mangos are always in season, so this recipe is a great option for any time of the year when you need a tropical pick me up!

Thai Mango Crunch Salad with Spicy Peanut Dressing
Ingredients
- 2 cups shredded kale
- 1 cup shredded cabbage
- 1/2 cup shredded carrots
- 1 cup julienned red bell peppers
- 1/2 cup sliced cucumbers
- 1/4 cup roasted salted peanuts
- 1/2 cup cilantro chopped
- 1 tsp sesame seeds
- 1/2 cup wonton strips
- 2 mangos, peeled & cut into slices
Spicy Peanut Dressing
- 1/2 cup creamy peanut butter
- 2 tsp rice wine vinegar
- 2 cloves garlic
- 1/2 inch piece ginger
- 2 tbsp soy sauce
- 1.5 tbsp sriracha
- 2 tbsp finely chopped cilantro
- 1 tsp sambal olek or chili garlic sauce
- 1/4 water or more as needed
Instructions
- Combine all of the salad ingredients in a large bowl or arrange on a serving platter.
- Combine the dressing ingredients in a food processor until smooth.
- Serve immediately with spicy peanut dressing on the side.
