I told you guys I’m totally working my way through getting a lot of the recipes in my highlights, up on the blog and this one in particular has been such a hit with the kids AND with parents! I love that this is great as a handheld item which makes it super easy for little ones to eat and also a great item to pack for school lunches!
This recipe uses potato to help bind these together and I’ve used veggies that do not release too much water so they really hold their shape. With that said, I would not add in a ton of veggies like peppers or zucchini in this recipe because it will really make them too soft. If you’re tikki feel like they’re falling a part, you can add in little mashed rice, some besan (chickpea flour), or oat flour or breadcrumbs! You can freeze these uncooked or cooked and reheat in the microwave, stove top or in the air fryer!
