Prepare the meat mixture and form them into patties 24 hours in advance. Place the patties in a container with strips of parchment paper in between to keep them from sticking to one another. Then you can throw them right on the grill! Toss the ingredients for the tandoori onions in a foil pan and leave on the top rack of your grill to slowly let them cook! Make the Cilantro Jalapeño Sauce 2 days ahead and store in a squeeze bottle for less mess!
Great because it requires no heating or cooking!! The chutneys, and fried tortillas can be prepared upto three days in advance. Leave all of the toppings out in bowls and everyone can assemble their own chaat bowls!!
