Listen, as a busy mom, I am all for ANYthing that makes my life with an “on the go” toddler, even a tad bit easier! I don’t always have time to stroll around the grocery store and so the new Curbside option from ALDI has been an absolute life saver! I add all the things I need in my cart from the comfort of my home, schedule a pickup date and time and then pull into one of their Curbside parking spots to wait for my order to be placed in my car. I’ve had such a great experience with the entire process and am so excited to share a bit of my ALDI grocery experience with these semi-homemade meals today!

We’ve spent so much time at home these last few months cooking up meals from scratch but it can be incredibly tiresome – which is why I love creating semi homemade meals. I’m sharing some of my favorite ALDI items and how I doctor them up to our liking at home! This mama is ALL about short cuts especially when they still taste homemade!

Creamy Broccoli, Quinoa & Brown Rice Skillet Casserole:

Prep Time: 10 minutes // Cook Time: 15 minutes // Serves: 2


1 package Simply Nature 90 Second Quinoa & Brown Rice

½ cup Friendly Farms Whole Milk

½ cup Happy Farms Shredded Cheddar Cheese

2 cloves garlic

½ cup diced onions

2 cups Simply Nature Frozen Broccoli, steamed

2 tbsp butter

Salt and pepper to taste


  1. In a large skillet melt the butter over medium heat. Once the butter is melted, add the garlic and cook until it is fragrant but not browned. Add the onions and continue to cook until the onions are soft and translucent.
  2. Add the Simply Nature 90 Second Quinoa & Brown Rice to the skillet along with the milk and use a spatula to gently combine everything together. Bring to a simmer and continue to cook until the milk has reduced by half. Add in the broccoli, cheese, mix well and serve hot! 

Tex Mex Shells & Cheese

Prep Time: 20 minutes // Cook Time: 15 minutes // Serves: 3-4


1 box Simply Nature Shells & Cheese

½ cup Season’s Choice Steamable Sweet Corn

2 tsp Casa Mamita Taco Seasoning

½ cup Friendly Farms Shredded Cheese

1 jalapeno, finely diced

¼ cup red bell pepper finely diced

¼ cup green bell pepper finely diced

½ cup Simply Nature Organic Black Beans 

2 tbsp Friendly Farms Whole Milk 

2 tbsp oil 

2 cloves of garlic, grated


  1. Cook the shells according to package directions. Drain & Set Aside.
  2. In a large skillet over medium heat, add the oil. Once the oil is hot, add jalapenos and bell peppers and cook until slightly softened. Add the garlic and cook for an additional 2-3 minutes until fragrant.
  3. Now add the taco seasoning, corn, black beans and stir to incorporate well. Add the packaged cheese that comes in the box, the milk and stir well.
  4. Serve and enjoy hot!

Earth Grown Black Bean Burgers & Kale Burgers with Trio of Sauces


1 package L’oven Fresh Hamburger Buns

1 box Earth Grown Black Bean & Kale Burgers

Happy Farms Deli Sliced Cheese

Burger Toppings: (Lettuce, Tomato, Onion,)

Chipotle Sauce:

In a food processor combine the following ingredients until smooth:

½ cup Burman’s Mayonnaise 

2 adobo peppers (Pueblo Lindo Chipotle in Adobo)

½ tsp Stonemill Ground Cumin Powder

1 Jalapeno roughly chopped

1 tbsp Simply Nature Apple Cider Vinegar

½ cup roughly chopped cilantro 

2 cloves garlic

Curry Aioli:

In a small bowl combine the following ingredients:

½ cup Burmans Mayonnaise

2 tsp curry powder

1 tsp garam masala

1 tsp cumin powder

2 cloves garlic, grated

½ cup roughly chopped cilantro 

Tandoori Ranch Dressing:

In a small bowl combine the following ingredients:

½ cup Tuscan Garden Buttermilk Ranch Dressing

2 tsp tandoori seasoning

2 cloves garlic

1 tsp garam masala

½ cup chopped cilantro 

Assemble the burgers:

  1. Cook the burger patties according to package directions. Choose your sauce and spread on both sides of the bun. Layer with lettuce, tomato, onion, burger, cheese slice and enjoy with extra sauce on the side!!
